A lovely strawberry thyme sorbet is here to cool things off a bit because ladies and gentlemen, I can feel it coming in the air tonight. Oh Lord! oh Loooord! The summer winds are blowing and though it’s surprisingly cool for March this year, it’s not going to be any further. After Holi- which I reckon is next week, or next- it’s going to be blast the aircon hot and what’s with Mercury being all retrograde and all, craving a spoonful of cold relief is completely justified. Problem is, you can’t do Baskin Robbins all day of the week now can you?

So raise your hands for Summer sorbet

0 sugar, 0 nasties, just plain fruit, a bit of honey and blitz and look what you get! A brilliant cold dessert that’s satisfying, super tasty, is good for you and basically just a salad! laughing hysterically at my own joke which you may or may not find funny.

Coming to think of it, it’s better than a salad because in a sorbet your mixer does all the job. And you can experiment with a plethora of flavours ranging from citrus fruits to americano! The latter however will require a bit of demerara sugar which is still a-okay if you ask me. Or you can use jaggery and coconut sugar if you prefer. Or stevia if you are off sugar. Lots of possibilities here!

Strawberry-Thyme sorbet- one that rocks my boat

Strawberry –> x. Strawberry + Thyme—> YES. Strawberry thyme sorbet? Kill for it!

For the life of me, I cannot have overtly sweet strawberry anything and the only way to get some seasonal strawberry in my stomach is through smoothies or sorbets which are not overtly sweet either. And of course, has some definitive element other than just strawberry.

Thyme on the other hand is my go to herb for everything. Pair it with honey, pair it with all sorts of berries…it’s like pear and rosemary. Or apple and sage. Bloody classic. Complementing the flavours of strawberry beautifully, giving it that intense earthy, dry, minty dimension; this sorbet can also be elevated into a boozy summer dessert if you add a bit of Vodka to it. Im just sayin’. Because Holi is here! Regardless…

Here’s how to blitz up some strawberry thyme sorbet

Ingredients:

You’ll need strawberries- I used half a kg, honey- 1tbsp or a little more, 3 to 4 tbsp of water, a spring of thyme, lemon juice (1/2 a lemon) and Cat to stare

How:

Bring strawberries, honey and water to a boil. Reduce heat, add thyme and lemon juice. Take it off gas and cool.

In a blender, blend to a pulp and freeze in a container for about 2-3 hours. Now take that out, beat the sorbet with a whisk, scoop it and blitz again to break the larger ice crystals into tiny, gelato-ish consistency. Put it back in the freezer.

Scoop it out when the craving hits you and enjoy with a serving of your favourite movie. Or in my case- Heidi!
