Whazza’ my lovelies! What you cooking this time of the year?
For most of you, it must be pre-autumn right? Pumpkins and apple pies and hot cocoa! For us in the sub-tropics, it’s still monsoon. It’s wet and grey and green with occasional sunlight and non-stop heavy showers. We are heading towards autumn, sure, but we still have some time to celebrate darker shades of orange and red. We are still very much in our mojito mood with a squeeze of lime and warm cheesy comfort food that makes you fuzzy and makes you want to see the rain from the comforts of your daybed. And coming to comfort food- it wouldn’t be comfortable if it takes more than 10 minutes. At least that’s what culinary comfort means to me.
This potato bake recipe is possibly the easiest I have in my oh-so-tattered recipe book (Mind you, it has my ingenious scribbles that alone yours truly can understand) and it can be “cooked” in the microwave itself. It takes 6 minutes to cook this easy potato bake and say in less than 10 minutes you have a plate full of wuzzy-warm-goodness that you can lick and lap with your favorite TV serial. Honestly, I had no intentions of putting this up here but looks like a lot of people around me loves easy vegetarian recipes that even they can cook (I’m talking guys). So the other day when a friend of mine asked me for this recipe, and he was the 4th one to get it mailed, I thought maybe for once and for all, I’ll put it up. It is, in fact, a great vegetarian recipe and can be cooked in minutes. It’s an easy recipe, a microwave recipe, its got cheese and potatoes and it takes 6 minutes to precise. What’s not good about it anyway. We can all use some easy going food once in a while, don’t we? Yes?
Let’s dig in! (I am so optimistic. When I write, I feel like I am writing for a group of people who really likes me and listens to everything I say and I’m like this really influential personality to who’s words you’d never say no. I like to think such things- feel important on my own.)
Nevertheless…..
Here’s what you’ll need:
3 large potatoes- peeled and sliced
2 tbsp of butter- melted
1/4th cup of grated cheese
Dill- chopped
Shallots or spring onions- chopped
1 clove of garlic- sliced
Salt, Pepper, Cajun Pepper- to taste
How
Take a microwave safe bowl and mix everything except cheese
Microwave it for 5 minutes and take it out
Pour in half of the cheese and mix it with the warm veggies and top it off with the other half
Microwave again for about a minute
Dip Recipe
2 tbsp of mayonnaise
Freshly ground pepper
Sliced spring onions
Mix everything and chill
Top with a dollop of mayo dip
And that’s it. Looks like a lot of trouble huh?
