Come on in for a glass of lemonade or best stay on for lunch. We’d love to have you here. The man in the house and I made some Herbed chicken in butter and lemon and it’s come out real well. But before you could get yourself settled on this deliciously cooked, impeccable looking bird (does that sound too cruel?) you’ll have to swear that with each bite you’d forgive stupidities, think that the world is still a better place to live in and ignore the ignorant.  I have figured this one simple thing out: When angry, when disappointed, when you feel like killing someone, cook up a good meal. There is something about good food that neutralizes anger/disappointment triggering hormones. Food is not the way, it is salvation. Possibly that is why they say, a well fed world, is a happy world. Good food is the one and the only way to keep those obnoxious nags (experience talking) out of your life, for words generally bypass you when you are munching something real deli. Home, office, friends circle- this will work anywhere. Munch on you crazy foodie and make them feel like a million bucks when the fact is you’re not listening to anything. This and drugs are the only two possible and valid ways to keep seriously stupid people out of your life for they somehow tend to appear with their foolish logic from time to time. I’m a coward, so food’s my drug save sometime when I can get really brave 😛 Swore? Good. Now dig.

In my house, its served with mashed potatoes and Yorkshire pudding (Janice, thank you for the recipe, it works everytime)

We love to eat, both Ro and me. And lately this has been our weekend staple. Nothing but assembling a couple of things and throwing it in the oven, this gives us time to watch the movies while cooking and as we like it, over a glass of wine or two. Serves us so right!

Very similar to the roast in recipe, this herbed chicken recipe is a scorer as a summer dinner recipe too. Light, juicy and full of flavor, it has that characteristic lemony tanginess to it which is so refreshing to the buds. I don’t remember where I first saw this herbed lemon chicken recipe,  I have added a few things and subtracted a few according to our taste buds over yeras, but tell you what, the end product has always been appreciated. I have never failed with this recipe- even the most gumpiest of guests have appreciated its taste (also the effort! hah! I hope they dont read this, ever) Anywho, it was time I shared this with you all.

Here you go.

INGREDIENTS

Chicken breasts: 2

Veggies (Whatever you want or is available): 2 cups

Lemon juice: of 2 lemons (small). You can of course use the juice from 1 large

Garlic: 5 small cloves, minced + 1 cut in length for rubbing the chicken

Butter: 1″ square for rubbing

Mixed dried herbs: 1 tbsp

Fresh oregano + Thyme + Rosemary: 1 tbsp

Olive oil: 1 tbsp + 1tbsp

Salt and pepper

DIRECTIONS

Rub the chicken breasts with butter and garlic. Sprinkle half of the dried herbs, a pinch of salt and drizzle 1 teaspoon of olive oil. set aside for about 30 minutes. Preferably in the freezer.

In a shallow basin, mix all the veggies, remaining olive oil from 1 tbsp, sprinkle salt and pepper, remaining dried herbs and minced garlic.

In a shallow baking dish pour 1 tbsp of olive oil and spread a layer of the vegetables. Sprinkle fresh herbs. Place your marinated chicken on top and top it off with another layer of vegetables. Between each layer sprinkle fresh herbs.

Pour about 1/2 a cup of water and in a preheated oven (220) roast your chicken at 200 for the first 10 minutes and then at 180 for about 40 to 45 minutes.

Take it out of the oven and let it settle for about 5 minutes before serving.

Serve with garlic bread, buttered loaf or Yorkshire pudding and mashed potatoes and of course with a face like it was real work. A quick and easy summer recipe that tastes and looks like a lot of effort has gone into it, the real fact in this case dear ladies remains hidden with the faux-chefs only, ah, of course until I decided to share. Wish everything in life was this simple!
